Case study · teaching
A gastronomy school's teaching mould set.
A set of teaching moulds for a pastry programme, designed with the head of pastry to teach specific techniques as well as produce the piece.
Customer
A gastronomy school

A UK gastronomy school running a pastry programme wanted a teaching mould set covering the core dessert forms — quenelle, entremet, insert, dome, tablet. The moulds had to be durable enough for a full course of students, food-contact grade throughout, and specified with documented paperwork for the school's placement and exam moderator visits.
The challenge
What we had to solve.
Teaching moulds get harder use than production ones. Twenty students, cross-cross-wash cycles, occasional drops. The moulds had to survive a full academic year without spec drift or visible wear that would affect student technique.
The approach
What we did.
We spec'd a firmer food-contact silicone across the set — slightly harder-wearing than we'd use for a single-chef bench. Cavity shapes were designed with the head of pastry to demonstrate techniques (a defined shoulder on the quenelle to teach the release, a specific radius on the entremet to teach filling behaviour). Full paperwork bundle for the school's placement office.
Outcome
How it works now.
The set has survived multiple cohorts. The head of pastry uses the mould-design conversation as part of the teaching itself. Reorder is straightforward as elements wear.
