Case study · bakery
A London bakery's tea-cake mould.
A specialist regional format, sized to the bakery's existing rack, with a scored cavity top to help raisin studding sit even at bake.
Customer
A London bakery

A London bakery specialising in regional formats wanted a dedicated tea-cake mould. They were previously baking tea-cakes free-form on a flat tray, with inconsistent shape and inconsistent studding — the raisins were sinking on some, breaking through on others.
The challenge
What we had to solve.
The bakery's rack was a legacy piece of kit — non-standard footprint. Any new tray had to fit it exactly with no adaptor plate. And the cavity top-edge had to be scored in a specific way to help the raisin dough sit even without pinching the tea-cakes into the wrong shape.
The approach
What we did.
We measured the rack, designed the tray to fit, and added a defined score to the cavity top-edge (a small ridge, chef-suggested) to help the raisin dough hold shape at proof. Grade was a bake-tolerant food-contact silicone.
Outcome
How it works now.
The bakery produces significantly more tea-cakes per shift with consistent shape and even studding. The tray reorders on a rolling basis; the drawing includes the rack fit-note for reorder continuity.
