Patisserie moulds · mousse moulds

Mousse moulds that hold a sharp edge out of the freezer.

Mousse is soft until it is frozen and soft again soon after. The mould has to give you a crisp shape in the short window between.

Overview

Mousse moulds, done properly.

Sharp-edged frozen mousse portions beside a silicone mould tray
Smooth cavities that keep a sharp edge

A frozen mousse has to release in one go. A mould that grabs at the corners leaves a soft, rounded edge that shows under glaze or spray.

We make mousse moulds with radiused internal corners, a smooth cavity and a silicone hardness matched to how your team pushes them out.

What we design for

The details that make this format work.

01

Clean edge release

Internal radii sized so frozen mousse lets go at the corners without tearing.

02

Smooth cavity for glaze

A finish that leaves nothing for the glaze to show up.

03

Push-out flexibility

Hardness set for a quick push from underneath.

04

Freezer-flat trays

A base that stays flat so desserts freeze level.

What we ask up front

The same four questions we ask on every job like this.

01

The demould motion

How does the pastry team actually pop the dessert out? Tell us — invert-onto-tray, warm-tap, flex-and-pop. The silicone hardness sits around that answer.

02

Setting temperature

Blast freezer, chiller, ambient. Each one changes the wall thickness and shape stability we design around.

03

What sits on top

Glaze, spray, gold leaf, isomalt shard. The finish on top of the dessert is affected by how flat the top of the mould sits — we bench-flatten every tray.

04

How many per service

A 20-a-service prep list wants a different cavity count from a 300-cover buffet. We plan tray layout around your kitchen, not a catalogue.

Questions

What people ask about this format.

Can I demould straight from the blast freezer?

Yes. That is what these are designed for.

Can you do a sharing size too?

Yes. We can make the same form in individual and sharing sizes.

Do I need acetate collars?

Not with a one-piece silicone mould of the right shape.
